Bing In The Moment

First climb of 2026, and wow… just standing there watching the sun set behind the mountains. Honestly, it hits different. Everything feels so quiet and calm, and BEING IN THE MOMENT, I just forgot about all the stress and noise. The fresh air, the colors, the light, and the way the golden sun rays engulfed the whole place. It makes you appreciate being alive and really in the moment. No rush, no distractions, just me, the mountain, and that amazing sunset. Couldn’t have asked for a better start to the year.

Nakatikim na ba kayo ng dinakdakan?

Authentic Dinakdakan Recipe | Grilled Pork Face & Brain

🐷 DINAKDAKAN RECIPE

Ingredients:

500g pork face (mask), ears, or pork belly (can also include tongue or liver if desired)

1 small pork brain (optional for creaminess; can substitute with mayonnaise)

1 medium red onion, thinly sliced

3–5 pcs green chili (siling haba), sliced

2 pcs bird’s eye chili (optional for heat), chopped

1–2 tbsp calamansi juice or vinegar

2–3 tbsp mayonnaise (if not using brain)

Salt and pepper to taste

Water for boiling

---

Instructions:

1. Boil the pork:

In a large pot, boil the pork face/ears until tender (around 45–60 minutes).

Optionally, boil the pork brain separately for about 10 minutes or until cooked through. Set aside.

2. Grill for flavor:

Once tender, grill or pan-sear the boiled pork until slightly charred for smoky flavor.

Chop the pork into bite-sized pieces.

3. Prepare the dressing:

If using pork brain: mash it and mix with calamansi or vinegar until creamy.

If using mayonnaise: mix it with calamansi or vinegar to mimic the brain’s texture and tang.

4. Mix it all together:

In a large bowl, combine the chopped pork, red onions, chilies, and creamy dressing.

Season with salt and pepper. Adjust vinegar/calamansi and mayo to taste.

5. Serve:

Best served warm or at room temperature.

Serve as pulutan or with hot steamed rice.

---

🔥 Tips:

Authentic Dinakdakan traditionally uses grilled pork face and brain.

You can adjust the heat level by reducing or adding more chili.

Mayonnaise is a modern substitute for pork brain for convenience and safety.

This bright yellow flower isn’t just beautiful — it’s called Acapulco (Senna alata), a powerful herbal plant used in the Philippines to treat skin conditions like ringworm and eczema.

Known as the ‘candle bush’ because of its upright blooms, it's one of the 10 DOH-approved medicinal plants. Nature really is the best healer! 🌱✨

WOW!

As the sun dipped low over Batanes, painting the sky in fiery hues, stood side by side on the untouched shore — the rolling clouds above, the waves whispering at your feet, and your reflections shimmering in the still water like a quiet dream. In this northernmost paradise of the Philippines, where time slows and nature speaks in silence, felt the world pause with us.
BATANES PHILIPPINES. Have you been there?
What's your experience looks like?

At sigurado magte-thank you ang wallet mo!
