For me, this apron isn’t just a piece of cloth I wear to protect my clothes from stains (though of course it is that given how clumsy I am).
It’s also a piece of me and my journey. When I first started making YouTube videos, I had no idea what I was doing. I had no professional culinary experience and assumed no one would be interested in what I had to say about cooking. And I was still figuring out how to be myself on camera.
So I started wearing aprons in my videos to give myself a confidence boost, to make myself feel a little bit more like a real chef. In those early years, an apron felt like my armor.
While I no longer need that armor, I still love putting on an apron before I set foot in the kitchen. These days, it feels less like a costume and more of a reflection of who I am as a cook: joyful, a little messy, and all about color.

I love when a recipe can upend your expectations of an ingredient you don’t like.
I have always disliked kidney beans. They remind me of salad bars in the 90s/early 2000s that invariably featured “three bean salads” (i.e., canned beans coated in store-bought Italian salad dressing).
But this rajma masala—a north Indian kidney bean curry with a rich tomato-onion gravy—completely changed my mind.
It’s made with dried beans, and while dried beans are always tastier than canned, I think the difference is even more pronounced with kidney beans. As the kidney beans cook, they release a starch-heavy liquid and become so creamy they kinda melt in your mouth.
When you mix the beans and their starchy cooking liquid with the masala ingredients, you end up with something magical—a truly velvety gravy with so much richness and body (and lots of flavor).

BTS of some recent recipe tests! Which one are you most excited about?
1️⃣ Sticky Orange Tofu Stir Fry. Just wrapped testing on this, so expect this on YouTube next month!
2️⃣ Rajma Masala. Tested this one a dozen times but it was worth it. Just shared the YouTube video for this (featuring my parents 🥰).
3️⃣ Shaved Cauliflower Salad with Coconut-Lime Dressing. Unfairly pretty (and possibly my favorite way to eat cauliflower). Recipe is now on the blog!
4️⃣ An absurdly creamy alternative to risotto. Coming to YouTube later this fall!
5️⃣ High-Protein Sweet & Salty Tahini Bark. This one just hit our meal plans app and it sits squarely in the middle of a Venn diagram of indulgent and healthy.
6️⃣ Spicy Tofu Roll Bowl. Tastes like sushi but in bowl form and ready in 30 minutes. Also new on our meal plans app!
7️⃣ Roasted Beets. So simple but tastes like luxury. This is a meal prep staple for me. Will be on the blog soon!
8️⃣ Matar Tofu. The perfect blend of a creamy gravy meets crunchy tofu. Coming to YouTube in October.
9️⃣ Spiced baked rice and chickpeas. Everything happens in one pan in the oven but with exceptional flavor. Coming to YouTube later this fall.

Celebrating 10 years vegan! When I decided to go vegan 10 years ago today, I never imagined how much it would change my life, personally and professionally.
What a privilege it has been to feel more aligned and compassionate, more joyful, more energetic, more creative both in and out of the kitchen, and to have found a new love for animals.
And thanks to all of you—whether you watch just one of my videos or all of them, whether you make one recipe or one hundred of them—you’ve given me purpose in a way I didn’t know was possible.

Rank your carbs! 1 is your favorite, 5 is your least favorite
Here are my rankings, which are admittedly fluid and complicated 😅
#1 (or 2): Bread: Because I love a good sandwich; also naan for dipping into curries and fluffy pita for everything.
#2 (or 1): Noodles: This sometimes moves into spot 1 because (a) I love the flavors typically paired with noodles (basically all Asian food) and (b) there’s no such thing as sad noodles but there is a lot of very sad bread.
#3 (or 4) Rice: Typically not transcendent but always reliable and a great accompaniment to two of my favorite meal categories, curries and stir fries.
#4 (or 5) Potatoes: It really depends on the preparation. Crispy smashed or scalloped in a creamy casserole? Sign me up. French fries or mashed potatoes? I’m fine without.
#5 (or 2 to 3) Pasta: This moves up to 2 or 3 if it’s great-quality pasta paired with a really flavorful sauce and ideally, a seasonal vegetable. But a lot of pasta is middling and I’d rather skip it.
