STUFFED TOMATOES WITH EGG AND MELTED CHEESE
Upgrade your meal routine with this simple trick! These stuffed tomatoes are officially one of my favorite recipes right now, and I’m so happy you loved the video tutorial.

INGREDIENTS
🍅 For the tomato baskets
Tomatoes - 3 large (1000 g)
🥣 For the filling
Portobello mushrooms - 1-2 large (150 g)
Chives - 1/3 cup (20 g)
Grated cheese - 1/2 cup (50 g)
Eggs - 3 large
Ground black pepper - to taste
Salt - to taste
🧀 For the cheese cap
Grated cheese - 1/2 cup (50 g)
🧃 For the zero-waste tomato juice
Tomato centers (reserved from the baskets)
Lemon juice - 2 tbsp
Sugar - 1/2 tsp
Salt - 1/4 tsp
INSTRUCTIONS
1. Prep Tomatoes 🔪
Slice off tomato tops and scoop out the centers into a bowl (save for juice). Place the tops in the air fryer as stands.
2. Add Filling 🥄
Dice mushrooms and chives. Fill tomato cups with mushrooms, chives, and half of the cheese.
3. Crack Eggs 🥚
Gently crack an egg into each tomato cup. Season with salt, pepper, and mound the rest of the cheese on top.
4. Air Fry ⏱️
Air fry at 350°F (180°C) for 15 minutes until the cheese is golden and the egg is set.
5. Make Juice 🍹
Mix reserved tomato centers with lemon juice, salt, and sugar. Serve alongside your warm tomatoes!

HASSELBACK EGGPLANTS WITH MELTY MOZZARELLA & VEGGIE STEW 😍
Once you try eggplants with this simple cut, you’ll never go back! So many of you adored this dish in my recent video, so I decided to drop the full text recipe card right here for your convenience. Soft Hasselback eggplants, melted mozzarella, and a rich vegetable stew - pure comfort in every bite.

INGREDIENTS
🍆 For the eggplants
Eggplants - 2 medium (500 g)
Olive oil - 2 tbsp
Smoked paprika - 1/4 tsp
Ground nutmeg - 1/4 tsp
Salt - to taste
🥘 For the vegetable base
Red bell pepper - 1 medium (170 g)
Whole peeled tomatoes - 1 can (14.5 oz / 400 g)
Fresh ginger - 1 tbsp, grated
Celery - 4 stalks (170 g)
Leek - 1 medium (150 g)
Onion - 1 small (80 g)
Garlic - 4 cloves
Olive oil - 1–2 tbsp
Smoked paprika - 1/4 tsp
Ground nutmeg - 1/4 tsp
Ground black pepper - to taste
Salt - to taste
🧀 To assemble
Fresh mozzarella - 8 oz (225 g)
Fresh basil - a handful
🌿 To finish
Olive oil - 1-2 tbsp
Grated Parmesan - 2 tbsp
INSTRUCTIONS
1. Season & Bake Eggplants 🍆
Make Hasselback cuts (accordion style) along the eggplants, leaving the stem intact. Mix olive oil, salt, smoked paprika, and nutmeg, then brush thoroughly between the slices. Roast at 400°F (200°C) for 25 minutes.
2. Prepare Vegetable Base 🔪
Dice onion, red bell pepper, garlic, celery, and leek. Sauté in olive oil with fresh ginger, smoked paprika, nutmeg, salt, and black pepper until soft and fragrant. Add crushed canned tomatoes and simmer until thick and rich.
3. Stuff with Mozzarella 🧀
Allow eggplants to cool slightly. Slice mozzarella and tuck 1-2 pieces between each slice along with fresh basil leaves. Drizzle with a little extra olive oil.
4. Melt the Cheese ✨
Return the stuffed eggplants to the oven and bake at 400°F (200°C) for another 5 minutes until the mozzarella is beautifully melted and bubbly.
5. Plate & Serve 🌿
Spoon the warm vegetable stew onto a serving plate as a base, top with the cheesy eggplants, sprinkle with freshly grated Parmesan, garnish with basil, and enjoy!

OVEN-BAKED CHEESY STUFFED PEPPERS 🍽️

INGREDIENTS
🌿 For the peppers
Bell peppers - 6 medium (800 g)
Olive oil - 1-2 tbsp
Fresh thyme - a few sprigs (10 g)
🥣 For the filling
Red onion - 1 medium (120 g)
Garlic - 6 cloves
Carrot - 1 medium (120 g)
Mushrooms - 7 oz (200 g)
Tomato - 1 large (200 g)
Leek - 1 medium (150 g)
Olive oil - 1 tbsp
Fresh thyme - a few sprigs (10 g)
Smoked paprika - 1/4 tsp (1 g)
Salt & ground black pepper - to taste
🍚 For the rice
Rice - 1/2 cup (100 g)
Water (or vegetable broth) - 2 cups (400 ml)
🌿 To finish
Green onions - 1/4 cup (20 g)
Fresh parsley - 1/4 cup (10 g)
Shredded cheese (regular or vegan) - 1 cup (100 g)
Salt - to taste
INSTRUCTIONS
1. Roast the Peppers ⏱️
Rub whole bell peppers with olive oil and thyme. Roast at 400°F (200°C) for 15-20 minutes until tender.
2. Sauté the Veggies 🍳
Dice onion, garlic, carrot, mushrooms, tomato, and leek. Sauté in olive oil with fresh thyme, smoked paprika, salt, and pepper until fragrant.
3. Cook the Rice 🍚
Add rice and water (or broth) to the veggie mix. Simmer until the rice absorbs the liquid and becomes tender.
4. Combine & Mix 🌿
Remove from heat, stir in chopped green onions and fresh parsley, and adjust salt to taste.
5. Stuff & Layer Cheese 🧀
Make a gentle lengthwise slit in each cooled pepper to form a boat. Carefully fill with the rice mixture and top generously with shredded cheese.
6. Final Bake & Serve ✨
Bake at 400°F (200°C) for 5 minutes until the cheese is melted and bubbly. Garnish with extra fresh herbs and enjoy!

🥒 AIR FRYER ZUCCHINI NESTS
You won’t believe it, but this mouthwatering dish is super easy to whip up at home! Juicy veggies, gooey melted cheese, runny egg yolks, and a little bit of tender love and care - that’s all it takes to make these irresistible zucchini nests!

INGREDIENTS
🥬 For the nests
Zucchini - 2 medium (600 g)
Carrot - 1 medium (150 g)
Garlic - 4 cloves (or to taste)
Egg whites - 3 large
Grated cheese (regular or vegan) - 3/4 cup (100 g)
Smoked paprika - 1/4 teaspoon
Ground nutmeg - 1/4 teaspoon
All-purpose flour - 2 tablespoons
🧀 For the centers
Grated cheese - 3 tablespoons (20 g)
Egg yolks - 4 large
🥣 To serve
Plain Greek yogurt (regular or vegan) - 2/3 cup (150 g)
Fresh parsley (or dill/cilantro) - 1/4 cup (5 g)
INSTRUCTIONS
1. Prep Veggies, Garlic & Eggs 🥕
Julienne zucchini and carrot into thin, long strips, and mince the garlic. Mix the veggies and garlic together with the egg whites in a bowl, and cover the yolks individually so they don't dry out.
2. Mix & Shape 🥣
Add the grated cheese, spices, and flour to the veggie mixture. Mix well, place onto your air fryer basket, and shape into nests with a hollow in the center.
3. Bake Nests ⏲️
Air fry at 360°F (180°C) for 12 minutes until golden.
4. Add Cheese 🧀
Spoon grated cheese into each hollow and air fry at 360°F (180°C) for 2 minutes until melted.
5. Add Yolks 🥚
Carefully place one egg yolk onto the melted cheese in each nest. Air fry at 360°F (180°C) for 2 more minutes.
6. Serve 🥄
Spread Greek yogurt on a plate, gently place nests on top, sprinkle with fresh parsley, and enjoy!

The juicy corn ribs video dropped last week, and so many of you asked for the written version. So here it is - exact measurements, step-by-step instructions, and photos of the process, all for your convenience!

INGREDIENTS
🌽 For the corn ribs
Fresh corn - 4 ears
Garlic powder - 1/4 teaspoon (1 g)
Lime juice - 2 tablespoons
Olive oil - 2 tablespoons
Smoked paprika - 1/4 teaspoon (1 g)
Salt - to taste
🥣 For the dill sauce
Plain Greek yogurt (regular or plant-based) - 2/3 cup (150 g)
Fresh dill - 1/3 cup (10 g)
Garlic - 1-2 cloves
Whole grain mustard - 1 teaspoon
Ground black pepper - to taste
Salt - to taste
🧈 To finish
Butter - 3 1/2 tablespoons (50 g)
Grated Parmesan (regular or vegan) - 1/4 cup (20 g)
INSTRUCTIONS
1. Prep the Ribs 🌽
Carefully slice corn ears into quarters lengthwise for small, curved pieces that cook evenly.
2. Season & Coat 🥣
Toss corn with salt, smoked paprika, garlic powder, lime juice, and olive oil. Coat every piece thoroughly.
3. Air Fry 🔥
Arrange ribs in the basket kernels-down in a single layer. Air fry at 350°F (180°C) for 15 minutes.
4. Flip & Crispen 💡
Flip the ribs and air fry for 5 more minutes until golden and crispy at the edges.
5. Whisk the Sauce ⏱️
Mix Greek yogurt, dill, garlic, mustard, salt, and pepper until smooth.
6. The Golden Finish 🧀
Brush hot ribs with butter and sprinkle with grated Parmesan.
7. Serve 🥄
Plate up with the garlic-dill sauce and enjoy warm!
