Would love for you to join me in my kitchen and on my cattle farm. I have always loved to cook since I was old enough to remember. I learned from my Mother and Grandmother's and have kept that same style of cooking. Some recipes are authentic Louisiana while others are just country cooking. All are delicious and I take you step by step as we visit so you can make the same flavorful recipe at home. I also am always trying new recipes and sharing with you. I love for you to just sit back with a cup of coffee or a glass of tea and let me tell you stories and entertain you while we cook. I also try to convert some of my recipes into quick no-talking videos for when you need to hop on and cook. I love on my family with food and treats. Lots of my videos include my family. Sometimes I'll get you to get your walking shoes on and we will stroll around the pastures and see the new calves born. I have made many friends here and we pray for one another.

1/2 cup chopped Cremini Mushrooms
1 Teaspoon Chili Powder
1/2 Teaspoon Cumin

Fresh Ground Black Pepper
10-ounce can Diced Tomatoes and Chilies (Rotel)

1-1/2 cups Chicken Broth
1 cup Whole Milk
18 Yellow Corn Tortillas
2 cups shredded Cheddar

(2) Now add the Diced Tomatoes and green Chilies
(3) Add the flour and stir to incorporate and let the flour absorb all the oil.
(4) Add the chicken broth and Milk. Let come to a low boil to thicken. Turn off the heat. RESERVE 1/2 cup and set to the side. Add the chicken and stir together.
(5) Preheat oven to 350-degrees. In a 9 x 13 inch oiled baking dish pour the 1/2 cup sauce and coat the bottom to keep the Tortillas from sticking. Now cover the bottom with 6 tortillas allowing them to slightly lap over each other.
(6) Ladle 1/3 the chicken mixture on top evenly. Sprinkle with 1/3 of each cheese. Repeat layers 2 more times. Tortillas, chicken mixture and ending with cheese layer on top.
(7) Cover with foil and bake 30 minutes. Then remove foil and bake another 15 minutes to allow the top to brown a bit. Remove from the oven and let rest about 5 minutes.
Enjoy with a crock full of Pintos, a green salad or both. Enjoy! #classic #casserole #recipe #King #ranch
