Cozy Moments by Katy

BLACKBERRY & VANILLA MUFFINS
•Ingredients
4 cups (600 g) cake flour
⅛ teaspoon salt
1½ cups (300 g) superfine (caster) sugar
1 cup (250 ml) milk
1 cup (250 ml) sour cream
2 eggs, lightly beaten
½ cup (125 g) butter, melted
Seeds from one vanilla bean
1 cup (250 g) fresh or frozen blackberries

•Method
Preheat the oven to 180°C (350°F/Gas 4). Prepare two 12-cup muffin pans by lining each cup with a paper liner.
Sift the flour and salt together into a large bowl, then add the sugar.
In a separate large bowl, whisk together the milk, sour cream, lightly beaten eggs, melted butter, and vanilla bean seeds until the mixture is smooth and creamy.
Pour the milk mixture into the bowl with the dry ingredients. Add the blackberries and gently mix everything together.
Using a spoon, divide the batter among the prepared muffin cups, filling each one about three-quarters full.
Bake for 25–30 minutes, until the muffins are beautifully golden and feel firm to the touch. Serve them while still pleasantly warm, or allow them to come to room temperature before enjoying.
