Your city has three days of food in it right now.

Six thousand years ago, cities with no engines and no refrigeration kept three years.

They did it with a hole in the ground. Seal grain in a pit and the seeds breathe out the oxygen, fill the space with CO₂, and everything that would eat it suffocates. No chemicals. No power. Just physics, run by people who had no word for oxygen.

We optimised the other way — just-in-time, no slack, because slack costs money. It works beautifully right up until the trucks don't show up.
