Білі гриби/ Porcini mushrooms (photos taken by my sister; Carpathians, Ukraine).
The porcini mushroom is one of the most prized edible mushrooms in the world. It has white flesh and a pleasant aroma and it does not darken when cooked.
Porcini mushrooms grow in many countries across Europe, Asia and North America, but in Ukraine, they are particularly abundant in the Carpathian Mountains and the Polissia region.
In the Carpathians they are gathered in coniferous and mixed forests. They can be boiled, fried, stewed, dried or pickled.
In Ukraine porcini mushrooms also hold special significance during the holidays. They are particularly valued in the lead-up to Christmas, especially for Christmas Eve dinner. Dried porcini mushrooms are used to make a traditional Lenten mushroom soup, which is a staple of the Christmas Eve meal. This soup is aromatic and rich, and for many Ukrainian families it is an important part of the holiday tradition.
