Just order it! ############## RECIPE ## ############## ----------------------- Sweet Potato with Spicy Lentil Filling (Serves 5) ----------------------- 5 medium sweet potatoes (approx. 300g each) 1 tbsp oil 1/2 tsp salt Lentil Filling: 180g brown lentils 600ml vegetable broth 40g walnuts 10g fresh parsley 1 red onion (100g, peeled) 3 garlic cloves 40g tomato paste 1 tbsp soy sauce 2 tsp dark balsamic vinegar 1 tsp smoked paprika 1 tsp chili flakes 1/2 tsp ground cumin 1/2 tsp fennel seeds 1/2 tsp caraway seeds Toppings: 20g walnuts 5 1 tablespoon plant-based quark or yogurt 5 teaspoons freshly chopped parsley ----------------------- Wash the sweet potatoes and prick them all over with a fork. Place them on a baking sheet and rub with oil and salt. Bake at 200°C (390°F) for 40-50 minutes, until tender but still slightly firm – turning them over halfway through. Dice the onion and garlic. Roughly chop the walnuts (60g total) and the parsley. In a pot, sauté the onions in a little oil until translucent – about 6-8 minutes. Add the fennel and caraway seeds and sauté for another 2 minutes. Add the garlic and tomato paste and sauté for 1 minute. Add the lentils, bell pepper, chili, and cumin to the pot and sauté for another 1 minute. Deglaze with the broth, bring to a boil, and simmer, covered, for 25-30 minutes. ... The lentils should now be cooked through and the sauce thickened. Add a little more broth if it reduces too quickly. Finally, stir in the vinegar and soy sauce, then stir in the 40g of walnuts and the parsley. Cut the cooked sweet potatoes lengthwise, gently press them open, and fluff the flesh with a fork. Spoon a portion of the filling into each potato and garnish with the toppings. ----------------------
