Ingredients
1 tbsp ragi (finger millet) flour
2 cups water
1 cup buttermilk (or whisked curd)
½ tsp grated ginger
½ green chilli, finely chopped (optional)
1 tbsp onion, finely chopped (optional)
1 tbsp coriander leaves, finely chopped
Rock salt to taste
Method
Step 1: Make the Ragi Base
Mix the ragi flour with ½ cup water to make a smooth, lump-free slurry.
Bring the remaining 1½ cups of water to a boil.
Slowly pour in the slurry while stirring continuously.
Cook on low flame until the mixture thickens and becomes smooth. Let it cool completely.
Step 2: Ferment
Once cooled, shape the cooked mixture into small balls (optional traditional method) or leave it as is.
Place in a bowl, add 1 cup water, cover, and ferment overnight (8–10 hours).
Step 3: Prepare Ambali
The next day, mash or whisk the fermented ragi until smooth.
Add buttermilk and mix to a drinkable consistency.
Add grated ginger, chopped green chilli, onion, coriander leaves, and rock salt.
Mix well and serve chilled or at room temperature.
