RECIPE ##
##############
-----------------------
Silken Tofu French Toast (6-8 slices)
-----------------------
6-8 slices of bread (e.g., thick slices of whole-wheat bread, sourdough, etc.)
Batter:
200g silken tofu
100ml plant-based milk
35g dates (dried, pitted)
1/2 vanilla bean (seeds only)
2 tsp chickpea flour
1 tsp cinnamon
Pinch of nutmeg
Pinch of salt
Toppings:
Plant-based yogurt
Berries or other fruit
Chopped nuts
Compote
-----------------------
Tip: The dates should be nice and soft so that the batter is smooth. If yours are rather firm, soak them in the warmed plant-based milk for 10 minutes.
For the batter, combine all ingredients in a blender and blend until smooth and creamy. Pour into a shallow bowl and let it rest for 10 minutes – it should then have the consistency of a slightly thicker pancake batter. Cut the bread into thick slices and add them to the batter. Let it soak for 30-60 seconds.
Fry the bread slices in a pan with oil until golden brown on both sides – about 3 minutes per side. Transfer to a plate and enjoy with your favorite toppings!
By the way, you can also make savory French toast. Simply replace the dates, vanilla, and cinnamon with ingredients like nutritional yeast, garlic, paprika, herbs, and a little more salt and pepper. Also, reduce the plant-based milk to 50ml. Give it a try!
