I so often hear and read the question: what can you eat for a snack on a plant-based diet? It's simple: tofu! But not sliced, which is also delicious, but as a really hearty spread!

RECIPE ##
##############
-----------------------
Savory Smoked Spread (450g)
-----------------------
240g kidney beans (drained weight)
150g smoked tofu
1 red onion (80g, peeled)
1 clove garlic
2 tbsp fresh chopped parsley
2 tbsp olive oil
3 tsp dried marjoram
1.5 tsp mustard
1 tsp lime juice
** 3/4 tsp salt
1/2 tsp pepper
Pinch of ground nutmeg
-----------------------
** If you have smoked salt, use that. Or add 1/2 tsp smoked paprika.
Finely dice the onion and sauté in a pan with a drizzle of oil over medium heat for a few minutes. Add the garlic and marjoram and sauté briefly. Remove from the heat and let cool slightly.
Crumble the smoked tofu coarsely. Set aside 1/3 of the onion mixture, 50g of the tofu, and the parsley.
Place all ingredients, except those reserved, in a blender and blend until smooth. Then add the remaining ingredients and blend briefly again until the desired consistency is reached.
If the mixture is too thick, gradually add a little water. Transfer to a sealable container (e.g., a canning jar) and store in the refrigerator. The spread should keep for 5-7 days.
