And some of you already recognise this. Iโve made it before!
Nothing fancy, itโs just a basic lunch at home, the kind of comforting meal you can make, enjoy, and repeat anytime without ever getting tired of it ๐๐๐ป
Skillet Rice Meal with Ginger Miso Glazed Chicken
๐๐ป Main:
โข 1 whole chicken leg, about 250 g
โข 1 tbsp fresh grated ginger
โข 1 tsp white miso (Hikari)
โข 1 tsp sweet soy sauce for dim sum (Lee Kum Kee)
๐๐ป Skillet Rice:
โข 1 cup soaked rice
โข ยฝ to 1 cup water (adjust depending on the rice type)
โข About 1 tbsp shio kombu (Kurakon Wasabi)
๐๐ป Finish:
โข Fresh chopped green onions
โข Toasted sesame seeds
โข Togarashi
NOTE:
Soak the rice for at least 30 minutes before cooking, longer is even better.
If you're wondering how long my rice is usually soaked, I actually prepare it in advance.
I wash and rinse about 3 cups of dry rice at a time, place it in a glass container filled with water, and store it in the refrigerator.
It stays perfectly fine for up to a week.
During that time, the rice gradually absorbs water and expands. About 3 cups of dry rice will become roughly 4 cups of soaked rice.
That means whenever I want to cook, I can simply scoop out 1 cup of soaked rice and get started right away. Super convenient and a great little time-saver. A small bit of preparation makes homemade meals much easier and faster on busy days๐๐ป๐
