Over the past several days, I’ve been fully locked in—creating late into the night, often until 3:00 a.m., after finishing my full-time workday.
My focus has been on making meaningful changes to Foodservice Education and expanding into the subjects I’m most passionate about passing down to the next generation of foodservice professionals.
In just a few days, more than 80 new videos have been uploaded, along with a major redesign of the channel and several updates to how our content is organized, presented, and packaged. The goal behind all of it is simple: make the education easier to find, easier to navigate, and capable of reaching more people across the industry.
At this point, I need to give myself a mental reset, so I’ll be taking the rest of the week away from creating.

It is truly an honor to serve as your instructor here at Foodservice Education and to share the knowledge and experience I’ve gained throughout more than 22 years in the foodservice industry.
For years, I wanted to find a way to give back to this industry and continue educating beyond the walls of a traditional classroom. YouTube gave me the opportunity to turn that vision into something much bigger than I originally imagined.

One of the most rewarding parts of my career is running into former students who are now working and building careers in this industry. Hearing someone call out, “Chef Pesce!” years after they sat in my classroom is a reminder that great education can leave an impact long after the lesson ends.
That is exactly what I hope to continue building here.
